Ingredients:
For the Cake:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
For the Mint Buttercream Cocoa Frosting:
- 1 cup cocoa powder (to sprinkle on top)
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 1/4 cup milk
- 1 teaspoon peppermint extract
- Green food coloring (optional)
For the Chocolate Ganache:
- 1/2 cup heavy cream
- 1 cup semisweet chocolate chips
Instructions:
- Preheat Your Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
- Combine Wet Ingredients: In another bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract until smooth.
- Combine Wet and Dry Ingredients: Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix.
- Bake the Cakes: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
- Make the Mint Buttercream Cocoa Frosting: In a large mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, milk, peppermint extract, and green food coloring (if using), beating until light and fluffy.
- Assemble the Cake: Once the cakes have cooled completely, place one layer on a serving plate or cake stand. Spread a generous layer of mint buttercream frosting over the top. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
- Prepare the Chocolate Ganache: In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and stir in the semisweet chocolate chips until smooth and glossy.
- Decorate the Cake: Pour the chocolate ganache over the top of the frosted cake, allowing it to drip down the sides for a beautiful finish. Finish with a sprinkle of cocoa powder if you'd like!
- Chill and Serve: Place the cake in the refrigerator for about 30 minutes to allow the ganache to set. Slice and serve your delicious Vanilla Chocolate Mint Cake, and enjoy the rich flavors of chocolate and refreshing mint in every bite!
This cake is perfect for any special occasion or simply as a treat to indulge in whenever you're craving something sweet and decadent. So go ahead, bake up a batch of this delightful dessert and watch as it disappears before your eyes!
