The vanilla chocolate mint cake recipe that’ll keep you coming back for seconds

We came up with this recipe for a company potluck and I’ve been obsessed with it ever since. I decided I HAD to share it. Anyways, enough about me, let’s whip up a heavenly Vanilla Chocolate Mint Cake that will leave your taste buds unable to function! This recipe combines the classic flavors of vanilla and chocolate with a refreshing hint of mint, creating a dessert that’s going to have your friend begging you for the recipe.


For the Cake:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract

For the Mint Buttercream Cocoa Frosting:

  • 1 cup cocoa powder (to sprinkle on top)
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon peppermint extract
  • Green food coloring (optional)

For the Chocolate Ganache:

  • 1/2 cup heavy cream
  • 1 cup semisweet chocolate chips


  1. Preheat Your Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. Combine Wet Ingredients: In another bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract until smooth.
  4. Combine Wet and Dry Ingredients: Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix.
  5. Bake the Cakes: Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
